Autumn Baking: Cinnamon Sugar Donut Muffins

As the air cools and the trees shed their leaves, we're naturally drawn to the kitchen to create warmth through baking. There's something so comforting about filling your home with the aroma of cinnamon and sugar on a crisp autumn day, isn't there?
These little muffins taste exactly like cinnamon sugar donuts but are much easier to make! No deep frying required—just simple ingredients you likely already have in your pantry, and a deliciously nostalgic treat to enjoy with your afternoon cup of tea.
Ingredients
For the muffins:
6 Tbsp unsalted butter, softened
1/4 cup white sugar
1/4 cup packed brown sugar
1 egg, lightly beaten
1/2 tsp vanilla extract
1 1/2 cups all-purpose flour
2 tsp baking powder
1/8 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup milk
For the coating:
4 Tbsp melted butter
2/3 cup sugar
1 1/2 tsp cinnamon
Method
Preheat your oven to 175°C and prepare your mini muffin tin with a light coating of butter or non-stick spray.
In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy.
Add the beaten egg and vanilla extract, mixing until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the flour mixture, mixing just until combined after each addition. Be careful not to overmix!
Fill each muffin cup about 2/3 full with batter.
Bake for 10-12 minutes until the edges are golden and a toothpick inserted in the center comes out clean.
While the muffins are baking, prepare the coating by melting the butter in one small bowl, and mixing the sugar and cinnamon in another.
Allow the muffins to cool just slightly (about 2-3 minutes) before removing them from the tin.
While still warm, lightly brush each muffin with melted butter, then roll in the cinnamon-sugar mixture until completely coated.
This recipe makes about 6 delicious mini muffins—the perfect amount for a cozy afternoon treat!
