Hot Cross Bun Bread & Butter Pudding Recipe

If you’ve got leftover hot cross buns from Easter (or even if you don’t… I won’t judge), this is one of my favourite ways to turn them into something even better.
Soft, spiced and crisp on top — this hot cross bun bread & butter pudding feels like the kind of dessert you make without rushing, and just because.
Light a candle, pop this in the oven and cozy up with a delicious Autumn treat.

Ingredients
4–6 hot cross buns, sliced in half
40g butter, softened
2 cups milk
½ cup cream
3 eggs
⅓ cup brown sugar
1 tsp vanilla extract
1 tsp cinnamon
½ tsp nutmeg
Optional: handful of raisins or chocolate chips
Method
Preheat your oven to 180°C (fan bake).
Butter your buns: Spread butter over each half of the hot cross buns, then layer them into a greased baking dish, slightly overlapping.
Make the custard: In a bowl, whisk together the milk, cream, eggs, brown sugar, vanilla, cinnamon, and nutmeg.
Pour and soak: Pour the custard evenly over the buns. Press them down gently so they soak it up.Leave for 10–15 minutes if you have time — this makes it extra soft and rich.
Bake: Bake for 30–35 minutes, until golden on top and just set in the middle.
To Serve
Serve warm, straight from the oven.
Optional (but recommended):
A drizzle of cream
A scoop of vanilla ice cream
Or just as it is, with a cup of tea and a quiet moment
